These no bake vegan cookies are so easy anyone can make them. Trust me. What’s more, I’m willing to bet everyone – even your picky, vegan-food-is-terrible friend – will love them – and eat them all on you. They are seriously the best raw cookies I’ve ever eaten. (Wait, can I say that about my own cooking?! Too late.)
Anyway, if you’re looking for a healthy vegan snack this weekend that’ll keep your sweet tooth at bay and that only requires 4 ingredients, here you go.
Here’s the recipe for my raw cashew, coconut and date vegan cookies:
Ingredients:
1 – 1.5 cup(s) of unsalted cashew nuts
1 cup of pitted dates (soaked for about 10 minutes)
2 tablespoonfuls of desiccated coconut
1 spoonful of nut butter of your choice (optional)
Method:
On a chopping board, chop the cashew nuts until all nuts are broken.
Chop the drained, pre-soaked dates roughly.
Add both to a large bowl or to your blender and blend until the cashews and dates are roughly combined. I only had a hand blender at my disposal when I made these so I added a spoonful of Kelkin No Added Sugar crunchy peanut butter just to make the mixture stick together better but if you’re using a fully powered blender, you can skip the nut butter if you like.
Add two generous spoonfuls (or go wild and add more) of the coconut and mix it into the mixture with a spoon so the coconut is evenly mixed through.
You can form cookies with your (freshly washed) hands or do what I do and roll it out using a sheet of clingfilm or greaseproof baking paper (the mixture is sticky so the paper helps).
Once you’ve rolled the mixture out (it can be as thick or thin, depending on how you like your cookies) I used a small cookie cutter and started to cut out cookies and place them on a large plate.
Finally, as the mixture is a bit sticky, I popped the cookies into the fridge to chill for 30 minutes to 1 hour so they firmed up a bit. You can decorate with dark choc chips or sesame seeds if you like.
