If I hear myself complain about being tired one more time… But we’re all in a collective state of tiredness, right? Welcome to adulthood.
In winter, I seem to feel particularly sluggish and there’s something about the cold weather that makes me reach for junk food quicker than the healthy snacks I usually take smug pride in gobbling. I’m also trying to quit caffeine which is all kinds of fun. I’ve been using the excuse that it’s too cold for smoothies but today I decided to get back into my daily beetroot juice routine, in the hopes it’ll give me a much needed burst of energy.
Last summer I guzzled a beetroot smoothie every single day and cheesy as it sounds, I genuinely felt like I was glowing every time I downed that beet goodness. The health benefits of beets are widely documented. A good source of iron, folate, folic acid and antioxidants, beetroot can lower blood pressure and some studies claim it can stave off dementia. There are also a number of studies claiming that beetroot can increase energy and stamina when it comes to exercise. In fact, paralympic gold medalist David Weir attributes his success to beetroot juice shots.
So, if you’re feeling completely zapped these days, my energising beetroot blueberry smoothie could be the healthy snack recipe you’ve been looking for. I won’t make any bold claims that you won’t be tired anymore (I wish) but you’ll definitely feel good after drinking it. On top of the beetroot’s powerful nutritional punch, this recipe also contains blueberries which are bursting with antioxidants and vitamin C. As well as giving you potassium, the banana’s sweetness takes the bitter edge off the beetroot so if you can use a really ripe banana, even people who hate beetroot will enjoy this smoothie.
This energising beetroot blueberry smoothie is a top choice if you’re looking for a healthy breakfast recipe or just a healthy snack on the go. It’s also a great option if you’re trying to cut down on caffeine (read more of my tips for quitting coffee here). It’s vegan, sugar free and, most importantly, it’ll take you two minutes to make. You can’t beet it (sorry).
Energising beetroot and blueberry smoothie recipe:
1 ripe banana (the riper the better)
1 punnet of blueberries (125g)
2-3 cooked beets (I used cooked but I’m sure raw would also work great)
A cup of plant milk – oat milk is my favourite – add more milk depending on how thick you like it.
Optional: a teaspoon of ground turmeric to add even more antioxidants
Add everything to your blender. Blend. Enjoy!
