I made these no bake date, brazil nut and dark chocolate squares last weekend and they are to die for, if I say so myself. So you can guess what recipe I’ll be rustling up again this weekend to celebrate St Patrick’s Day.
If you’re looking for a vegan snack recipe that will only take about 30 minutes to make, look no further than this no bake recipe. Not only are these squares a delicious way to get more nuts and oats into your diet but I can guarantee you will want to eat them all yourself.
As always, I prefer to mess around in the kitchen so I rarely measure ingredients so feel free to adjust my ingredients list based on what you like; add another date if you want an even sweeter base, use more chocolate to get a thick Magnum ice cream-style dark chocolate layer, use smooth nut butter if that’s your favourite, etc.
Also, I used vegan dark chocolate from my local health store (which was admittedly a bit Mockolatey – send me your vegan chocolate recommendations please!) to make this a vegan-friendly recipe but you can use milk chocolate or chocolate chips if you’re not vegan.
Recipe for vegan-friendly no bake date, brazil nut and dark chocolate squares:
INGREDIENTS
1 – 2 tablespoons of nut butter (I use crunchy sugar-free peanut butter)
Approx 20 brazil nuts soaked overnight, drained and chopped
5-6 medjool dates, soaked first for about 10 minutes, pitted and chopped
50g jumbo or rolled oats
75g dark dairy free chocolate
METHOD
Add chopped brazil nuts and chopped dates to a large mixing bowl. With a handheld blender, blitz for a few seconds.
Add nut butter and oats and use a spoon to mix together.
Blend again until everything is well mixed. I personally like to have the odd chunk of nut in the mixture but you can blend it as smoothly as you like.
I also don’t like the mixture to be too dry so, while I’ve listed 50g of oats above, I tend to add it slowly, mix it and judge accordingly.
The mixture should be sticky enough to come together in a ball. Roll it out into a large rectangle.
In a small saucepan, slowly melt your dark dairy free chocolate over a medium heat.
Pour it over your mixture (the thicker, the better) and refrigerate for an hour. Slice into squares and enjoy!
