All out of ideas for what to make for dinner tonight? Allow me. One of my go-to vegan dinner recipes is this quick and easy tomato spelt risotto. By quick, I mean it’ll take you 30 minutes to make…and 3 minutes to eat. Continue reading “Spicy tomato spelt risotto”
I know what you’re thinking. ‘I can buy my own peanut butter cups’ but where’s the fun in that?! Continue reading “2 ingredient peanut butter cups recipe”
Summer is definitely in the air and I for one am looking forward to the days of La Roche Posay Factor 50, getting my vitamin D fix and not having to wear 6 layers of clothes to cover all four seasons in one day. The other reason why I’m looking forward to summer (even though I live in Ireland and we have approximately 1 and a half days of sunshine each year) is it gives me the perfect excuse to live on my new favourite vegan snack, peanut butter ice cream. Continue reading “3 ingredient peanut butter banana ice cream”
Of all the meals we eat in a day, I’ve always found vegan/vegetarian breakfasts the hardest. Maybe it’s because I’m not a big breakfast fan (but trying to become one) or maybe it’s because everything seems to involve eggs or dairy, especially when you go to a café or you’re staying in a hotel. Everything changed when I discovered tofu scramble, Mediterranean-style. Continue reading “Mediterranean tofu scramble recipe”
Even though I have a fear of being That Vegetarian (you know, the one who doesn’t eat properly, ends up sick or deficient in something and just contributes to the idea plant based diets aren’t healthy) I don’t eat as much greens as I know I should. I am currently hanging my head in veggie shame. Thank God for smoothies like this one. Continue reading “Iron-rich super smoothie”
Whether you’re looking for a vegan breakfast recipe or you just want a healthy snack to pop in the fridge while you’re on the go, this blueberry oat parfait will do the trick. Continue reading “All out of vegan breakfast ideas? This blueberry oat parfait will hit the spot”
Hands up if you ate a little too much chocolate over Easter! While I didn’t eat a single chocolate egg this year (yes, that sound you hear is the sound of my inner Chunk from The Goonies sobbing) I definitely overindulged on the food front and will be blaming Easter feasting for my next crotch blow-out. No regrets though.
As I mentioned before, I’ve really been trying to cut down on sugar in my diet so I’m always looking for sugar-free snacks to satisfy my sweet tooth and stop the nagging sugar cravings, especially after dinner when I would steal sweets straight from a baby. Continue reading “5 ingredient no bake date and pecan bites”
I made these no bake date, brazil nut and dark chocolate squares last weekend and they are to die for, if I say so myself. So you can guess what recipe I’ll be rustling up again this weekend to celebrate St Patrick’s Day.
If you’re looking for a vegan snack recipe that will only take about 30 minutes to make, look no further than this no bake recipe. Not only are these squares a delicious way to get more nuts and oats into your diet but I can guarantee you will want to eat them all yourself. Continue reading “Seriously addictive no bake date, Brazil nut and dark chocolate squares”
If I hear myself complain about being tired one more time… But we’re all in a collective state of tiredness, right? Welcome to adulthood.
In winter, I seem to feel particularly sluggish and there’s something about the cold weather that makes me reach for junk food quicker than the healthy snacks I usually take smug pride in gobbling. I’m also trying to quit caffeine which is all kinds of fun. I’ve been using the excuse that it’s too cold for smoothies but today I decided to get back into my daily beetroot juice routine, in the hopes it’ll give me a much needed burst of energy. Continue reading “Energising beetroot smoothie recipe for when you feel completely zapped”
