Dear reader, please forgive me. I fully intended to post a round-up of easy vegan snack recipes for anyone who is looking for healthy snacks for Christmas but I just haven’t gotten around to it, thanks to the unpredictability of being a freelance writer. This weekend I managed to escape into the kitchen for half an hour, listen to a podcast (Leah Remini discussing Scientology on Ru Paul: What’s the Tee? – I 100% recommend it) and make these unbelievably easy date and cashew nut energy balls.
Similar to my recipe for coconut and cashew cookies, these balls are vegan, you only need 4 ingredients and there’s no baking required so, even if you’re time-strapped or not exactly Nigella in the kitchen, you’ll be able to make them. So, if you’re looking for a really delicious but healthy snack before you overindulge over the festive season, give these date, cashew and coconut energy balls a go. Someone at work recently asked me what I do for ‘downtime’ and I said ‘listen to podcasts and bake.’ (I didn’t think ‘worrying’ was the correct answer.) So today I made cookies and listened to an interview with Prozac Nation author Elizabeth Wurtzel, one of my favourite writers, talking about smuggling cocaine into Norway in her diaphragm and almost destroying her writing career. Cocaine smuggling and cookie recipes go hand-in-hand, ya know.
Anyway, against this unlikely soundtrack I made the easiest healthy 4 ingredient cookies ever. Bananas, oats, coconut and sesame seeds. That’s it. I’m always looking for a healthy snack to binge on when I’m hunched over my laptop on a deadline – and I love recipes with 3 or 4 ingredients so I don’t have to go shopping for baking ingredients I’ll never use again – so these vegan oat cookies are my new go-to healthy snacks when I need a sugar-free pick-me-up. Like everyone else, I’ve been trying to cut down on sugar but I just can’t seem to kick the cravings for something sweet, especially after dinner. Going sugarfree is making me go a bit Incredible Hulk so to combat this, I’ve been exploring the world of baking. Or should I say no-bake baking because I am all about the raw vegan treats these days, as you can probably tell from my Instagram.
My favourite, most addictive creation to date are these no bake brazil nut and date squares covered in melted dark chocolate. Words won’t do justice to how delicious these vegan snacks are but they’re kinda like caramel squares but healthier and so easy to make. Trust me, someone who can’t make a Pot Noodle can make these. These no bake vegan cookies are so easy anyone can make them. Trust me. What’s more, I’m willing to bet everyone – even your picky, vegan-food-is-terrible friend – will love them – and eat them all on you. They are seriously the best raw cookies I’ve ever eaten. (Wait, can I say that about my own cooking?! Too late.)
Anyway, if you’re looking for a healthy vegan snack this weekend that’ll keep your sweet tooth at bay and that only requires 4 ingredients, here you go. Continue reading “Easy vegan recipes: 4 ingredient no bake coconut & cashew cookies”
